Pea Soup with Turkey Bacon - Instant Pot
Ingredients (for a 6-qt Instant Pot)
3 oz Turkey bacon (or a few drops of liquid smoke) 1
Large white onion (or 10 oz bag of frozen chopped onions) 2 tbsp
Minced garlic 4 cups Low salt chicken broth 2 cups Water 1 lb
Dried, split peas 1/2 tbsp Salt 1/2 tbsp Paprika 1/4 tbsp Pepper 1/4 tsp
Chili powder
- Set Instant Pot to "Saute"
- Add a little oil, saute bacon. When cooked, remove and dice it, and then set aside when cooked
- Saute onions until translucent (add garlic about halfway)
- Add broth, water, peas, bacon, and spices to the onions
- Set pressure cooker to "Manual" (High Pressure) for 15 minutes, turn off heat and wait for Natural Release.
- Use an immersion blender to mix
- Once cooled enough, taste to see if it needs more spices/salt
For a vegetarian version, liquid smoke and vegetable stock can be used instead of turkey bacon and chicken stock.
