Spicy Peanut Noodles with Cucumber

Makes 2-3 servings as a main dish.

I've been making this dish for so long, I don't have exact measurements.  Ingredients should be adjusted to taste.

Ingredients
1 Cucumber
1 package Udon noodles
3 tbsp Peanut butter
  Low salt soy sauce
  Rice vinegar
  Sesame oil
1 tbsp Minced garlic
  Cumin
  Sriracha to taste
  Ginger
1 Banana pepper (optional) finely diced.
1 Green pepper, diced

  1. Cut cucumber in half and turn into "noodles" with a thick blade setting.  Cut "noodles" into ~8" strips.  Let stand to drain moisture.
    Or chop half a cucumber into small pieces and add a second package of noodles
  2. Prepare udon noodles according to package directions and then drain.
    • For a non-vegan version add some bullion to the udon noodles while they soak
    • Or substitute a package of ramen and use half the soup package.
  3. Add peanut butter, vinegar, and soy sauce to noodles and stir to evenly coat noodles.
  4. Add pepper, cumin, ginger, and garlic to noodles and stir
  5. Adjust ingredients to taste.
  6. Add sriracha to adjust spiciness to desired level.

Udon (wheat) and cucumber* noodles, green and orange bell peppers*, banana peppers* (medium spiciness), peanut butter (peanuts, salt), garlic, sriracha, low salt soy sauce, ginger, rice vinegar, chives*, cumin, chicken stock (a tiny, homepathic amount)
