Tomato Sauce Soup

Makes ~5 servings

Ingredients

1/2 cup onion, chopped (thaw if using frozen)

1 tablespoon minced garlic

1 tablespoon EVOO.

1/8 cup flour (2 tbsp)

2 cups tomato sauce

15 ounces Low sodium chicken broth

1/2 cup milk

1/4 cup chopped fresh basil (or 1 1/2 teaspoons dried basil)

1/8 teaspoon dried thyme

1/8 teaspoon dried dill weed

1/8 teaspoon black pepper to taste

1/4 teaspoon salt to taste

dash of hot sauce (optional)

Steps

  1. Chop the onion. 
  • If using a raw onion puree with the garlic and oil in a food processor or immersion blend at the end
  • Optional if using frozen chopped onion
  • In a large saucepan, heat the oil.  Over medium low heat,
    sauté the onion 1-2 minutes add garlic near end.  Do not brown.
  • Stir in the flour and cook 1 minute.
  • Add the remaining ingredients.  Stir until well
    blended.  Bring to a boil, reduce heat, and simmer, uncovered, 20
    minutes.
  • Use an immersion blender to mince the onion (optional if using frozen chopped onion)

  • Ladle into bowls and serve with grilled cheese
