Tomato Sauce Soup
Makes ~5 servings
Ingredients
1/2 cup onion, chopped (thaw if using frozen)
1 tablespoon minced garlic
1 tablespoon EVOO.
1/8 cup flour (2 tbsp)
2 cups tomato sauce
15 ounces Low sodium chicken broth
1/2 cup milk
1/4 cup chopped fresh basil (or 1 1/2 teaspoons dried basil)
1/8 teaspoon dried thyme
1/8 teaspoon dried dill weed
1/8 teaspoon black pepper to taste
1/4 teaspoon salt to taste
dash of hot sauce (optional)
Steps
- Chop the onion.
- If using a raw onion puree with the garlic and oil in a food processor or immersion blend at the end
- Optional if using frozen chopped onion
sauté the onion 1-2 minutes add garlic near end. Do not brown.
