Frozen Baked Latkes

Frozen Baked Latkes

  Makes about 18 latkes

Ingredients:
1 bag (30oz) frozen hasbrown mix (shredded potatoes)
1 onion (shredded or grated) or a 10oz bag of frozen chopped onions
2 eggs
1 tsp salt
1/2 tsp pepper
1/4 cup matzo meal or 1/4 cup flour
parchment paper
oil to grease the parchment paper(optional but traditional)

Directions:
  1. Preheat oven to 425°F.
  2. Microwave frozen ingredients to thaw (or leave in fridge over night).
  3. Mix all ingredients in a large bowl.
  4. Add salt and pepper (adjust to taste).
  5. Cover two cookie sheets with parchment paper.
  6. Use a 1/4 cup measuring spoon to place mixture on cookie sheets and flatten.
  7. Bake 15 minutes; flip latkes, switch cookies sheets so they both get a chance on the upper rack. Bake 10 minutes longer until golden brown.
Serve with applesauce or sour cream.
